Oysters with Smoked Salmon, Sour Cream & Chives

Serves 4 as a starter

1 dozen Irish oysters
4 slices smoked Irish salmon
Small tub sour cream
Small bunch fresh chives
Lemon wedges and brown bread

Open oysters and place under hot grill for 30 – 40 secs.

Cut smoked salmon into thin ribbons and finely the dice chives.

Remove oysters from grill and place 1 teaspoon of sour cream on each. Top with ribbons of smoked salmon and a sprinkling of chopped chives.

Serve with lemon wedges and brown bread.
